Recipes: Sumptuous Summer Appetizers

Summer is one of the best times of the year. School is out, children are free to play and explore in then neighborhood. Adults flock to the beach during free days and some take vacations. It is a time for fun, frolicking, sun, sand, summer love and parties. Summer parties are great because of the company, the alcohol, the atmosphere and the food!

There are appetizers that are made especially for summer. Most of these appetizers involve fruits and most are also served cold or chilled. Summer appetizers help assuage the heat of the summer, and even if they're served during other seasons every bite will remind you of summer memories. Here are great recipes you can try for that perfect summer appetizer.

Cream Cheese Balls – Soften cream cheese in a bowl and add some chopped bell peppers, crushed pineapples, chopped green onions and salt. Prepare another bowl and line it with some plastic wrap. Meanwhile get some of the cheese mixture, form it into balls before placing it in the plastic wrap. When you've used up all the cheese mixture, cover the bowl and place it in the refrigerator for at least 2 hours. This will ensure that the cheese balls have set firmly. Before serving, roll the balls into a plate of finely chopped walnuts and then put it a platter of your choice.

Fruit Salsa and Cinnamon Chips – Mix diced kiwis, raspberries, white sugar, fruit preserves, diced apples, strawberries and brown sugar in a large bowl. Make sure the mixture is thoroughly mixed before covering the bowl. Place the bowl in a refrigerator and chill. Coat both sides of a flour tortilla with some cooking spray and cut it into several wedges. Arrange the wedges into a baking sheet and sprinkle them with some cinnamon sugar. Spray another coat of cooking spray on the wedges and bake them for ten minutes in an oven preheated to 350 degrees Fahrenheit. Serve the chips in a platter together with the fruit mixture in a bowl.
