There are many cold cut recipes at your disposal. One simple, yet tasty, recipe that you can create is a marinated cold beef salad. This dish combines the rich taste of marinated beef with the crisp and fresh flavor of green salad.
To make this appetizer you will need virgin olive oil, some red wine vinegar, Dijon mustard, crushed garlic, honey, salt and some freshly ground black pepper. For the salad, you need to gather mushrooms, roast beef, spring greens, baby spinach greens, some cherry tomatoes, artichokes, parsley and some minced blue cheese.
Start by making the marinade. Get a small glass jar. Pour in the olive oil, mustard, salt, garlic, vinegar, honey and some pepper. Blend all the ingredients together by shaking the glass jar. Set aside.
Get another bowl and throw in the mushrooms, tomatoes and the artichokes. Add the beef and pour the marinade in the bowl. Toss all the ingredients together until everything is coated by the marinade.
Sprinkle the salad with crumbled blue cheese and garnish it with parsley.
Place the salad in the refrigerator and allow it to chill for about two hours.
